Strawberry Coconut Dressing & Salad – raw & gluten free, quick & easy

After I finished making a salad for my husband’s lunchbox I decided to bust out the camera to explain what I did. It was very tasty dressing.

Ingredients:

DRESSING:
1/4 pound fresh strawberries, washed well
1/2 cup coconut oil
1 1/2 teaspoon olive oil
heavy pinch salt
1/2 tablespoon honey
1 teaspoon rice wine vinegar
water, optional as needed to thin out

Toppings:
Lettuce
half medium cucumber, thinly sliced
3 thinly sliced strawberries
small handful baby carrots

Directions:

Blend all your dressing ingredients until really smooth. Prepare your toppings. Pour your dressing on and enjoy, that simple!

Makes: approx. 1 cup prepared, Preparation: 3 minutes
